A crazy idea – yet it resulted in the launch of SaltLite™, a breakthrough ingredient innovation enabling cheese producers to cut sodium content by up to 50% while maintaining great taste and texture.

The new concept is a combination of the cheese coagulant CHY-MAX® M for improved texture and reduced bitterness and specifically selected DVS® starter and adjunct cultures to enhance the flavor profile of reduced sodium cheese.
